Healthy Pasta Broth Recipe

Pasta in broth is eaten regularly in Chinese households.  In Hong Kong, noodles are almost a staple in the diet, second to rice.  In England, it it sometimes too difficult to source Chinese ingredients. Though Chinese supermarkets are now practically in every town, the products can be pricey and uneconomical.  Therefore, we substitute pasta for noodles and ramen regularly in our household.

Chinese breakfasts are often savoury and quite substantial.  Noodles, congee and rice are common hearty breakfasts that set you up for the day.  This is a simple pasta broth recipe that I've adapted and can be eaten as a breakfast, lunch or light main meal.


1.  Boil pasta












2.  In a frying pan, gently fry some diced bacon, you can also substitute bacon for chicken.  I've not put any oil in the pan as bacon has some fat anyway.

3.  Add 1 chopped tomato.



4.  Add pasta
5.  Add water to cover pasta
6.  Simmer for 5 minutes

7.  Serve.  Easy!









My advice is to be creative and add the vegetables you like.  Carrots are especially good as they give the broth an added flavour.  Let me know if you make this and what you think.
